Low Carb Ice Cream

  I see many low-carb and keto folks making ice cream with cottage cheese so I decided to try it too. It was very easy to do... Here are the ingredients and how to do it.


1 cup 4% cottage cheese(any fat %)

1 cup frozen strawberries(any berry)

Stevia to taste( your favorite sweetener)  I only used 1 packet more to suit your taste


Mix all together and whip in a blender, magic Bullet, etc. Whip till creamy like whipped cream. Transfer to freezer bowl and freeze for up to 4 hrs. Longer will cause it to freeze hard as a rock, as all keto premade icecreams do. If so, let it set for a few min. before eating.

Fresh Peaches

 More freshly picked peaches... the last batch I had I made a pie and froze a couple quarts. This time I do not have enough to freeze so I think I will make a cobbler. I do not have a recipe for a sugar-free cobbler but I will use a regular recipe from a cookbook but replace the sugar with monk fruit...

Protein- We need it

 Hello, I am back. I closed all of my low-carb groups and pages and even this blog. I wish I had saved this blog because it is nowhere to be found on Blogger. That is Ok I will restart it... I miss my posting here so here goes the first post.....


Why are keto folks afraid of eating protein? Because keto doctors push fat, fat, and more fat. So of course, if a person has been using FAT as a primary macro they will see a glucose increase when they eat protein or carbs. Do not be afraid... It will soon adjust. We need protein. 

"Protein is the only macronutrient that does not contribute to fat mass, so restricting it is counterproductive, as protein is what builds muscle mass. Diabetics need more muscle mass and less fat mass, so making them fear protein is the worst thing that can be done to them."~ Gina More Minis  


Without muscles and good bones, we start to deteriorate. We may fall more often if we do not eat enough protein... I suggest having 3-4 ounces of protein per meal and adding more when your body adjusts to it.. this is just a short post on protein. I will go into the whys and hows in a later post...


Add chicken, beef, pork, and fish to your daily meals. Go easy at first if you are not used to eating protein. Your muscles will thank you for it.  Enjoy your protein. :)
